Open Face Chicken Teriyaki Sandwiches


You know what’s great?
Rotisserie chickens.
Their versatility never ceases to amaze me. Sometimes I can get a little carried away buying them and stockpiling their meat. But you can add the chicken to just about anything. It’s a fabulous time-saver.
This recipe is quite simple and comes together nicely. It was an easy dinner for a chaotic week—and I liked that.
Open Face Chicken Teriyaki Sandwiches
Whole grain loaf of bread, sliced
1 cup rotisserie chicken, shredded
2-3 tablespoons of your favorite teriyaki sauce
Swiss cheese
Fresh pineapple, sliced into rings
Start by grilling the bread to a nice golden brown. Once this is completed, begin grilling the pineapple. Add the chicken to a frying pan set over medium high heat. Cook for approximately 5 minutes. Add the teriyaki sauce and continue heating for an additional 5 minutes.
Assemble your sandwich.
Easy and delicious.
