Make Perfect Grilled Cheese Sandwiches with a Pair of Baking Sheets

If you love grilled cheese sandwiches and want a foolproof way to make sure your sandwiches are perfectly crispy on the outside and gooey and melted on the inside, this tip from the folks at Cooks Country may be a bit more involved than just flipping a sandwich in a pan, but it'll make sure that whether you're making grilled cheese for yourself or for a group, they'll turn out perfectly every time.
The key to this method is to ditch the pan entirely and go with the oven instead. You'll need a pair of baking sheets to make this work, and you'll want to preheat the oven with the sheets inside already, so they get nice and hot. Make your grilled cheese sandwiches however you like (they have a recipe they suggest for this method) and then put the sandwiches on the first preheated rack. Then slide that rack in the oven, and put the second preheated rack on top, and let them bake. The hot baking sheets will make the bread crisp and crunchy, and the heat from the sheets and the oven should melt the cheese inside and warm up whatever other fillings you've put in the sandwich without making them ooze out everywhere.
After a few minutes, take the sheets out, remove the top one, and serve the sandwiches—that's all there is to it. Granted, even Cooks Country acknowledges that this may be too involved if you're only making one or two sandwiches for yourself or a guest, but if you're feeding a group or family and need to whip up a bunch of these things at once, it might be worth a try, and safer than using a press on the stove.
